Bio

With knowledge and experience in all aspects of the bread business, Will Combes brings to ICASI students the complete picture of creating the many varieties of artisan breads along with the essential information necessary for successful production and marketing. His passion for bread developed at New England Culinary Institute where he studied Culinary Arts and Food Service Management after spending many successful but unfulfilling years in a corporate environment. He has realized great success as he has immersed himself in the business of making bread. His energy and creative inspiration that is a key to his business, carries enthusiastically into the classroom. The owner of Western Reserve Bread Company since 1996. Will is a member of the Bread Bakers Guild of America and the Retail Bakers Association. As Western Reserve Bakery grew, he transitioned the ownership and operations to an all-natural, organic bakery in Central Ohio (May 2012). Chef Will continues to consult with emerging retail bakeries and teach at Ohio’s premier culinary and baking/pastry arts educational institution, ICASI. He is a strong advocate for formal culinary and baking/pastry education. He has hosted and taught interns from all reaches of the culinary ecucational field, from high school through degreed programs. He has taught classes ranging from recreational pre-schoolers, vocational students, product managers from Nestles/Stouffers, avid home bakers, matriculated culinary students, and career-changing entrepreneurs. He has been an associate and friend of Loretta Paganini for nearly two decades, and is honored and grateful to be included in ICASIs core of instructors.
